It chronicles the use of lipases and phospholipases in the creation of structured lipids and fats, including cocoa butter, low-calorie fats, and Betapol, and emerging methods using supercritical carbon dioxide as a benign solvent for lipid analysis, fractionation, and enzymatic reaction.
