Das ist noch eine der harmloseren Gefahren, auf die Anthony Bourdain in seinen gnadenlosen, abgründig witzigen Memoiren hinweist. Von der Strandkneipe bis zum Nobelrestaurant hat er alles durchlebt, was diese wahrhaft heiße Szene zu bieten hat. Ein unvergesslicher Blick hinter die Küchentür und eine abenteuerliche Reise in die dunklen Gefilde der kulinarischen Welt. Ein versierter Gourmet erzählt, und der Leser wird hingebungsvoll zum Gourmand -- von Seite zu Seite ein bisschen mehr. Die Geständnisse eines Küchenchefs, sie ziehen in den Bann. Verständlich, denn irgendwann war jeder schon einmal Teil dieser kulinarischen Maschinerie, dieses bis ins Detail geplanten Wechselspiels zwischen Küche und Service. Was hinter Küchentüren so abläuft, na ja, das hat man sich ja immer schon gedacht -- oder ist es ganz anders? Nur soviel: skurril bis spannend, und das nächste Menü in irgendeinem Restaurant sehen Sie ganz sicher mit anderen Augen. "Ich möchte auch dann noch Küchenchef sein, wenn das Ding hier erschienen ist" sagt der gebürtige Franzose Anthony Bourdain in seinem Vorwort. Die Angst mag angesichts seiner Geschichten, Anekdoten und schauerlich-schöner Erlebnisse zunächst gerechtfertigt sein, allerdings kann man am Ende sagen: Dieser verbal gewiefte und mit Humor -- von schwarz bis umwerfend -- gesegnete Küchenchef hat kein Blatt vor den Mund genommen, aber seine Schläge bleiben immer oberhalb der Gürtellinie. Er kritisiert schon mal die Branche, in der er sich -- ganz nach alter Tellerwäschermanier -- von unten nach oben gearbeitet hat, aber zwischen den Zeilen erkennt man die überzeugende Liebe zu seinem Beruf. "Essen war für mich immer ein Abenteuer", gesteht er, und man glaubt es ihm sofort. Die Geständnisse vermitteln Atmosphärisches und gestatten höchst unterhaltsame Einblicke in für jeden Gast sonst unerreichbare Gefilde. Durchaus zu beherzigende Tipps gibt es auch zwischendurch: warum man Montags keinen Fisch essen, zum Sonntags-Brunch keine Meeresfrüchte-frittata bestellen oder nicht unbedingt in jedem Restaurant Muscheln verspeisen sollte. Da läuft einem stellenweise das Wasser im Mund zusammen, wenn es um die Köstlichkeiten internationaler Küchen geht, aber schon im nächsten Moment mag man lieber nichts mehr herunterschlucken, wenn "Discount-Sushi" oder "Spezial-Gerichte" auf der Montagskarte durchleuchtet werden. Lieber nicht. Und eines ist nun auch Gewissheit: "Die Wiederbenutzung von Brot wird in der gesamten Gastronomie praktiziert." Und wer Angst hat, ein "tuberkulöser Hinterwäldler" könnte auf den Brotkorb gehustet haben, der sollte, so Bourdain, lieber auch keine U-Bahn benutzen.
