In the village of Tremolat, Périgord (South West of France), the lonely headmistress Helene befriends the local butcher Popaul in the wedding party of her colleague, Leon Hamel. In spite of their friendship, they do not become lovers as Helene is still recovering from the disillusionment of her last relationship. On Popaul's birthday, Helene gives a lighter to him as a gift. During the excursion with her class to a cave in the woods, Helene finds the last victim of a serial killer that is stabbing young women in the area. She realizes that the woman is Leon's wife and she finds Popaul's lighter in the crime scene but she hides the evidence from the police.

Sexual frustration is the focus of this Hitchcockian thriller from French director Claude Chabrol. Stephane Audran, who was Chabrol's wife at the time, makes an engaging heroine, and Jean Yanne (in one of his best roles) is simultaneously scary and pathetic as the obsessive butcher.

The plot of Chabrol’s "Le Boucher" seems simple but many people have pointed out the complexities within the film’s two protagonists, as well as Chabol’s ability to mimic Hitchcock thrillers, yet surpass them in a sense. "Le Boucher" is one of two films that Hitchcock stated that he wished he had made.

Hélène et Popaul, respectivement institutrice et boucher, se rencontrent à un mariage dans un petit village. Ils deviennent amis. La quiétude du village se dissipe à mesure que des filles y sont retrouvées assassinées. En excursion avec sa classe, Hélène trouve le briquet qu'elle a offert à Popaul près d'une scène de crime...

"Le Boucher" marque la troisième collaboration entre Claude Chabrol et Jean Yanne après La Ligne de démarcation et Que la bête meure.

Mêlant un décor paisible et presque idyllique de province à une affaire sordide de meurtre, Chabrol réussit une œuvre quasi parfaite avec "Le Boucher". Il crée un climat tout en ambivalence avec des images rassurantes qu’il place en décalage par notamment l’utilisation d’une bande sonore plus stressante et laissant pressentir le drame. Le film est porté par une Stéphane Audran parfaite, donnant beaucoup de force à son personnage de directrice d’école pleine de vie et avenante. A ses côtés, ou plutôt face à elle, Jean Yanne est magnifique. Il n’a que rarement été aussi convaincant que dans ce film. "Le Boucher" est sans aucun doute à classer parmi les films les plus réussis de Claude Chabrol.
