It is now eight years since the first publication appeared. Since then, and particularly in the last two to three years, some fundamental changes have taken place within the industry, which will continue for many years to come. A basic innovation has been the arrival on the scene of ‘no frills, low cost’ carriers in Europe, the USA, and Australia. This trend will undoubtedly grow in the foreseeable future. Since passengers on medium or long-haul journeys will want to eat, different arrangements will have to be made to satisfy their needs. At the same time, it may be that refreshments and/or meals become a source of revenue for the carrier rather than an expense should a third party be commissioned to take the full responsibility for catering and sales.
